Blueberries are a wonderful berry that grows more often in the North. It is even included in the astronaut menu. The healing properties of blueberries have long been known. Various pies and desserts, muffins and rolls, cakes and buns are prepared with it.

Blueberry shortcake is one of our family's favorites. Especially for its preparation, our family collects about two buckets of a unique northern berry - blueberries - in our taiga forest. Then we freeze it and enjoy all year round a pie made from delicate shortcrust pastry, juicy berries and vanilla-sour cream filling.

To make shortcrust pastry pie with blueberries, I prepare the ingredients according to the list.

First I knead the dough. Sift the flour into a bowl, add the yolks, regular and vanilla sugar (I use with natural vanilla), salt, sour cream, and butter at room temperature.

I knead the shortbread dough, place it in a bag and put it in the cold for 30 minutes.

I grease a round springform pan with a diameter of 22-24 cm with vegetable oil, lay it out with dough rolled into a circle, forming a bottom and side. I make tucks along the edge of the dough.

Using a fork, make holes in the bottom of the dough base.

Then I bake the base in an oven preheated to 200 degrees for about 18 minutes. To prevent the dough from puffing up, it is better to cover it with parchment before baking and pour beans on it. I take the pan with the dough out of the oven.

While the dough is baking, I prepare the sour cream filling. In a bowl, combine sour cream, eggs, whites, simple and vanilla sugar, and starch.

I beat the filling with a mixer or whisk.

I add blueberries to the baked base.

Sprinkle the berries with sugar.

I fill them with sour cream mixture.

I bake the pie in the oven at 200 degrees for about 28-30 minutes.

Today I will tell you how to bake blueberry shortcake because we went to the forest and picked four liters of beautiful blueberries. But that's not true. The sour cream will completely fill the mold with the berries, but the eggs will do their job - the filling will set. After baking, you will get a well-baked soft shortbread crust with a delicate berry-creamy top layer.

I love the combination of soft shortcrust pastry, berries and sour cream in this blueberry shortbread pie. The blueberries in it are especially tender. And of course, the undeniable advantage is the simplicity and speed of baking with the excellent taste of blueberry shortcake.

  • Flour – 1.5 cups (200 ml cup)
  • Egg – 1 piece
  • Margarine – 150 grams

  • Sour cream – 1 glass (200 ml glass)
  • Granulated sugar – 0.5 cups (200 ml glass)

How to Make Blueberry Shortbread Pie:

  • Sort through the blueberries. Rinse in a colander and place on a plate and let dry.
  • Grease the baking pan with vegetable oil and sprinkle with semolina to make the cake release easily from the pan. Sift flour into a large bowl, add baking soda and granulated sugar. Mix. Then do everything quickly, add the egg, take the margarine out of the refrigerator, grate it into the dough on a coarse grater and mix with a spoon until smooth. You can use a food processor to knead the dough.
  • Transfer the dough into the mold and quickly evenly distribute the dough over the mold, making small sides about 2 cm high. Place the mold in the freezer for 15-20 minutes, after cooling the dough will bake well.
  • Prepare sour cream filling. In a bowl, beat the egg with sugar until smooth.
  • Add sour cream and stir. The filling is ready.
  • Remove the pan with the dough from the freezer and lightly sprinkle the surface with semolina. I always use this technique in cases with liquid filling. Semolina creates a boundary between the dough and the filling and additionally helps the latter to set.
  • Scatter fresh blueberries evenly over the surface of the pie. If you use frozen berries, you do not need to defrost them; just put them straight.
  • Carefully pour the sour cream filling over the berries.
  • Place the pie in a preheated oven at 200 degrees for 35-40 minutes. Check the readiness of the pie by piercing it with a sushi stick. Once the cake is baked, you will immediately feel the firmness of the shortbread crust.
  • Remove the pie from the oven and leave to cool for 10-15 minutes. Without removing from the mold, cut the pie into pieces; use a spatula to easily transfer them to plates
  • Blueberry shortcake is ready.

My notes:

The peculiarity of the shortcrust pastry for this pie is that it is soft and difficult to completely remove from the mold. I bake the shortbread pie in a large ceramic pan and cut it into pieces. And the pieces are easily removed with a spatula.

You will need

Dough

Flour, as well as butter, plays one of the most important roles in shortcrust pastry. Select only the highest grade and finely ground flour, and do not replace butter with margarine or a low-quality surrogate such as a spread.

Filling

  • 100 g granulated sugar;
  • 25 g potato or corn starch;
  • 1 tsp. cinnamon powder;
  • 300 – 350 g fresh or frozen blueberries.

Important! In addition to blueberries, other berries are good for such a pie, except perhaps raspberries or strawberries, which do not produce juice at all. Accordingly, you should avoid using berries that are too juicy, such as cherries, and if you still have to, use a colander to rid the berries of excess juice.

  • 1 egg yolk;
  • 20 g butter or margarine;
  • 500 g of peas for the press.

Dough

  1. Add granulated sugar to the flour mixture and mix.

  2. Then take the butter from the refrigerator and put it in a bowl with flour.

  3. If the butter begins to melt during the process, put it in the freezer for another five minutes.
  4. After the oil, add water before kneading.
  5. Without wasting time, quickly knead the shortbread dough.

  6. Form the dough into one large ball and wrap it in plastic wrap.

  7. Place in the refrigerator (place closer to the wall) for an hour, or better yet, two.

Important! If your dough sticks too much to your hands and crumbles, add another tablespoon (or two) of sifted flour and continue to knead the dough diligently until you can roll the mass into a ball. Don't add too much flour at once, as too much flour will turn your cake into a hard berry biscuit.

Did you know? The blueberries should give juice and thicken with sugar; when you add the starch powder, the mass itself will look like thick jelly. If this does not happen, add another teaspoon of starch, but be careful not to overdo it, as it has too strong a taste and will resonate unpleasantly in the cake.

  • Sour cream – 500 ml.

  • Sugar – 6 tablespoons.
  • Vanillin – a pinch.
  • Flour – 4 spoons.
  • Berries - fresh or frozen blueberries, to which you need to add 1 teaspoon of starch.

Step-by-step recipe for making shortbread pie:

Sift the flour, enriching it with oxygen. Add sugar, baking powder. Stir.

Beat in an egg, pour in sour cream, add softened butter chopped into pieces.

Knead the dough. The food processor did the work for me, but in a bowl it’s quite easy to do with your hands. Grind the dough into crumbs, as in the photo. There is no need to knead for a long time, just mix the ingredients.

Transfer to the table, form into a ball, wrap in film and place on the refrigerator shelf to rest for about an hour.

Sort the blueberries, wash them, and be sure to dry them a little.

Add starch to the berries and stir. It will retain the juice of the berry, which is important for the taste of the pie.

  6. Level the dough into shape and pour half of the blueberries into it. Sprinkle 50 g of sugar generously on top of the berries.

  7. Pour in the remaining blueberries and also sprinkle with 50 g of sugar.
  8. Roll out the second part of the dough and cover our pie with it. Remove excess dough and fold the edges in a circle. Poke the entire surface of the pie with a fork to allow air to escape.

  9. Place the pie in the oven for 35 minutes, which is already turned on at 180 degrees.
