It may sound strange, but for me this is the perfect dish for the cold season. It is filled with bright colors and tastes, which are so lacking at this time. My "winter" version of the quesadilla is made with canned tomatoes, frozen vegetables, and smoked or fried chicken. All components are almost ready, and all that remains is to mix them and slightly warm them in a pan.

Prepare the ingredients.

I use canned tomatoes and frozen vegetables, but of course you can use fresh. Instead of fresh or canned tomatoes, you can use ready-made tomato sauce - this will speed up the cooking process.

Chicken can be used raw, but in my opinion, the option with smoked or fried chicken is a little more flavorful.

Wheat tortillas, if necessary, can replace pita bread. It is enough just to cut small round cakes from large sheets of pita bread.

Fry the onion in a small amount of vegetable oil until soft and golden brown.

Add chopped sweet pepper, salt, ground black pepper and fry everything together for a few more minutes until the pepper is soft.

Add chopped garlic, tomatoes or tomato sauce. I grind canned in a blender and add the resulting sauce to the pan.

Bring the sauce to a boil. Add chicken pieces, salt and spices to taste and cook over low heat for another 2-3 minutes, so that the sauce thickens slightly and the meat warms up. This sauce can be made ahead of time or doubled up, saving some for the next day. At the right time, all that remains to be done is to warm the sauce along with the tortilla.

Grease a frying pan with vegetable oil and lay out the tortilla. I use a grill pan, but a regular one will do.

Sprinkle the top of the tortilla with grated cheese.

Place a portion of chicken and vegetable sauce on half of the tortilla. Sprinkle with a pinch of chopped green onions.

Fold the cake in half. Fry for a few minutes until golden brown on one side.

Then turn over and fry on the other side.

Serve the finished quesadilla with chicken, cut into several pieces - triangles.
