How to cook pork deliciously? This question often arises when we decide what can be cooked from pork. Of course, there are many recipes. But I want to cook something new and original.

For example, I like to cook pork meat in Korean style. This dish is easy to prepare. True, you need to marinate the meat for up to eight hours. That's why I cook this dish on weekends. I marinate the meat overnight and in the morning it is ready to cook.

So, to prepare this delicious pork dish, we need:
500-600 g pork pulp,
two medium onions,
four to five garlic cloves,
one level tablespoon of granulated sugar,
three full tablespoons of soy sauce,
ground black pepper,
salt to taste.

1. Wash the pork thoroughly under cold running water, dry it with a paper towel and cut into small pieces.

2. Cut the onion into thin half rings. I usually chop onions with a long, wide knife.

3. Cut the garlic into thin strips.

4. Place pieces of meat in a saucepan, add onion half rings, chopped garlic, salt, ground pepper, sugar and soy sauce. Mix everything thoroughly so that the meat is completely marinated, and put it in the refrigerator to marinate for eight to nine hours.

5. After the allotted time, take the meat out of the refrigerator and place it, along with onions and garlic, in a baking dish. Pour the remaining marinade on top.

6. Preheat the oven to two hundred degrees and place the form with meat in it. In half an hour

It is generally accepted that the success of a meat dish largely depends on the quality of the meat. The softer and better quality it is, the tastier the meat will be when finished. But there is another component of success - spices and marinade. With the help of marinade and spices, you can cook amazingly tasty meat, and it doesn’t matter how soft it was initially. Even tough beef will turn out juicy, soft and tender if the meat is marinated for several hours in soy sauce with ginger and spices. True, there is one “but” - the marinade is very rich, the taste of natural meat will not be in the finished dish. Korean meat, the recipe with photos of its preparation you will learn today, will be spicy, hot, tart, tasty, juicy and soft, prepared based on oriental cuisine. Why based on? The explanation is simple - it is not always possible to buy some specific ingredients of sauces or marinades that are used in traditional Korean cuisine. Therefore, in the European version, some ingredients were replaced with more affordable ones that suited the taste, leaving the meat preparation technology itself generally unchanged. We also advise you to see how it is prepared, perhaps this recipe will suit your taste.

Ingredients:

- beef – 400-500 g;
- chili pepper – 3-4 pinches;
- ground black pepper – 0.5 teaspoon;
- sesame oil (or any vegetable oil) – 2 tbsp. spoons;
- dark soy sauce – 3-4 tbsp. spoons;
- garlic – 3 cloves;
- ginger – 1.5 tbsp. grated spoons;
- vegetable oil - for frying meat;

- green onions, hot peppers - for serving.

Recipe with photos step by step:

The meat should be cut as thin as possible, into long strips, as is usually done for preparing oriental dishes. It is very convenient to cut slightly frozen meat, then the strips will turn out the same, the meat is cut easily. But if you bought fresh meat, then, of course, it makes no sense to freeze it. Just try to slice it thinly by first dividing it into thin slices (as for chops) and then cutting them into strips. Important clarification: cutting must be done along the grain! Lightly pepper the beef and stir.

Mix freshly ground black pepper and chili pepper for the marinade (if you don’t like it very spicy, replace it with paprika), add oil. Beat lightly.

Add soy sauce, mixing all the ingredients of the marinade until smooth. It is more convenient to add the sauce one spoon at a time.

Grate garlic into meat. Or pass the garlic cloves through a press, crush them into a paste in a mortar and add to the beef.

Peel a piece of ginger the size of half a matchbox. Grate on a very fine grater. Add to beef.

Mix meat with garlic and grated ginger. Pour in soy sauce. Mix thoroughly so that the sauce, garlic and ginger get onto each piece of beef. If the soy sauce is not very salty, add a little salt to the meat. But in general, this is not necessary, the spices will give their taste to the meat, it will not be bland. Leave the meat to marinate for several hours (you need to wait at least two hours).

It is better to fry the meat in portions so that it is fried in oil and not stewed. Heat a small amount of vegetable oil and add some of the marinated beef to it. Fry the meat over medium heat, stirring constantly to ensure even cooking.

Fry for about five minutes, no longer. The beef should brown slightly and become dark.

Korean meat is served piping hot to preserve its juiciness and softness. Place a portion of the fried beef on a plate. Sprinkle with coarsely chopped green onions and pieces of hot or sweet pepper. Any side dish, at your discretion: fresh or stewed vegetables, boiled rice, salads, pickled vegetables (Korean cabbage),

Korean braised beef

There are many different ways to prepare meat dishes in Korea. If you are used to the fact that meat is served to you cooked and you need to eat it with a knife and fork, cutting it into pieces, then the Korean method of cooking meat may seem somewhat unusual and even confusing to you. After all, the most popular way of cooking meat in Korea is when you fry it yourself at your table.

Bulgogi, which literally means “fire-roasted meat” or “fire meat,” can be made from either beef or pork. In restaurants specializing in bulgogi, each table has a special fryer or grate. Typically these roasters are gas-based, but it is also common to see ones that are heated the traditional way using coals. These roasters are the most popular because they are becoming rare. The taste of the bulgogi depends on the type of fire and grill used.

For some reason, everyone thinks that if a dish is Korean, it must be spicy, and even small children eat this meat. For bulgogi, it is best to use beef tenderloin, but other non-tough cuts of beef, like mine, will work. The meat turns out very aromatic, tasty even when cold. Lacking an open fire at home, I fried the meat in a saucepan.

There is no single marinade for bulgogi, since all family secrets are kept sacred and not disclosed, and this method is just a base with small deviations. At the moment I don’t have sesame oil at home, which is advisable to add to the marinade, I haven’t noticed much of a difference.

Cut the onion and pepper into large chunks. Here they act as accompaniments for bulgogi. You can take Korean snacks and salads. I also had to add hot green pepper. We call it Dungan, but it is very similar to jalapeño. It was a compliment to my husband, but it didn’t have to be added at all. What’s good about this recipe is that you can fry peppers, onions and garlic in any quantity with or after meat.
